I've noriced this too. I can't edit characters on my phone, but I can on my tablet. I haven't been able to determine what's causing this. If I want to change something, I just have to delete the character and start over.

Go to the main characters page where you can select and create characters. Then use the edit prompt from the 3 dots over the character’s picture. It worked for me when the other edit prompts did not.

I noticed this as well in Venice in the mobile PWA. try going to 'Characters' first, to see the page where you list all of your character tiles.
then find the ellipsis on the specific tile of the character > edit character.
that's the only way I've been able to edit the text fields; although there are multiple ways to get to those screens, the other methods don't allow editing. Confusing bug?
